Cake and Fruit Platter

Summer is on the way which means lots of picnics and BBQs and I don’t know about you but we are SO excited for these events and a yummy cake and fruit platter.

To prepare you for the exciting summer plans we have given you some inspo for a cake and fruit platter that is suitable for anyone who is allergic to any of the top 14 allergens as all of the ingredients are allergen friendly. This is not only easy to create but also so impressive and effortless too.

This Cake and Fruit Platter is also amazing because you can pack this up and take it with you like we did as our team made it and absolutely LOVED it.⁠

You can add as much fruit and your favourite cakes to this. We used banana bread and brownie and of course our Gnawbles too.

Ingredients

  • 1x Creative Nature Brownie Mix⁠
  • ⁠1x Creative Nature Banana Bread Mix⁠
  • 1 cup of strawberries ⁠
  • 1 cup of Raspberries ⁠
  • 1x Kiwi ⁠
  • 1x Orange ⁠
  • 1 cup of green grapes ⁠
  • 1x Creative Nature salted caramel Gnawbles 30g⁠
  • 175g Dairy free spread
  • 3x bananas
  • 9tbsp of water
  • 3tbsp Flaxseed

Method

1. Preheat the oven to 180 degrees fan.
2. In a bowl mash up the bananas until smooth with a fork.
3. Then add the Banana bread baking mix and 40g dairy free spread and store until fully combined.
4. Spoon the mixture into a greased loaf tin.
5. Mix together the flaxseed and water and wait for it to dissolve for 10mins.
6. In a bowl mix in the brownie mix, flaxseed water and 125g of dairy free spread until combined then pour into a square tin.
7. Place the banana bread brownies in the oven to bake for 20 – 25 minutes.
8. Once baked, take them out of the oven. Place tin foil over the banana bread and put in the oven for a further 20mins.
9. Whilst this is baking, prepare the oranges and a few strawberries by slicing in quarters and cut up the kiwis width ways.
10. Evenly cut both bakes and place everything on the platter board.
