Christmas Cupcakes

It’s CHRISTMAS EVE! We can’t believe it’s Christmas Day tomorrow, it has come around so quickly but we are so excited and we hope you are too. To celebrate we have given you yummy Christmas cupcakes which you can bake for the big day tomorrow to eat whilst opening all of your presents.

These Christmas cupcakes are so fun to make and you can decorate them as Christmassy as you like.

Our gluten free banana bread made the yummiest cupcakes and they’re so quick and easy to bake which is an absolute bonus.

We hope that you all have a lovely evening and don’t forget to leave out a carrot and mince pie by the chimney.

Ingredients

  • 2x Creative Nature banana bread Mix
  • 6x Large ripe bananas
  • 80g Dairy free spread
  • 600g Icing sugar
  • 300g Dairy free butter
  • Green food colouring
  • Christmas decor

Method

  1. Preheat the oven to 180 degrees fan.

  2. In a bowl mash up the bananas until smooth with a fork.

  3. Then add the baking mix and dairy free spread and stir until fully combined.

  4. Evenly distribute these into cupcake cases and place in the oven for 25 minutes.

  5. Once the cupcakes are baked, let them cool.

  6. Whilst they are cooling, whisk together the icing sugar and butter and add the food colouring till you get the desired green colour.

  7. Once cooled, pipe on the icing and add your decorations

  8. Finally, ENJOY
