This January we’ve jumped on the ‘veggie baking’ train and experimented with different ways to incorporate vegetables into our recipes, this is our Courgette Chocolate Loaf.

This Courgette Chocolate Loaf couldn’t be easier to make and not only do you get to enjoy the nutritional benefits of courgette including its high water content and being a good source of Vitamin C, adding courgette also makes for a deliciously springy and squidgy texture- win win!

This loaf is great for packed lunches too as they are allergen friendly and have added nutrition’s too.

  • 1 Courgette
  • 1 Creative Nature Cacao Rich Chocolate Cake Baking Mix
  • 250ml plant milk
  • 110ml of vegetable oil (or 100g melted coconut oil)

Share this recipe


1- Follow the instructions on the back of your Chocolate Cake Baking mix but grease and line a loaf tin as opposed to a cake tin.

2- Before pouring the mixture into the tin, grate in 1 courgette and mix until fully combined.

3- Bake as instructed.
