Fudgy Beetroot Brownies

Did you know that adding beetroot to your brownie mix can create a seriously fudgy, gooey texture?? Neither did we! Another one of our vegetable experiments that we are very pleased with is our Fudgy Beetroot Brownies.

This is a great way to incorporate vegetables that maybe you wouldn’t eat otherwise and with Beetroot being an excellent source of folic acid, potassium and magnesium you can’t go wrong!

For this Fudgy Beetroot Brownies recipe, we simply added 3 medium beets (cooked and pureed) into our regular brownie mix following the vegan recipe! If you like your brownies a little sweeter we would recommend adding a natural sugar or sweetener to the mix too.⁠.. Enjoy!

  • 3 Medium Beetroots (cooked and pureed)
  • 1 Creative Nature Chia & Cacao Chip Brownie Mix
  • 3 tbsp Milled Flaxseed
  • 9 tbsp water
  • 125g Dairy Free Spread

1- Cook and puree your Beets (this can be done by boiling them)

2- Prepare your brownies as per the instructions on the pack

3- Stir in your beetroot puree until the mixture is fully combined

4- Bake for 20-25 Minutes depending on the level of squidgyness you desire
