Gnawble Cupcakes

This yummy Gnawble Cupcakes recipe was sent to us by the lovely @bethantomo !   If you enjoy baking from scratch then these cupcakes are the one for you- this delicious vegan recipe is fully customisable to include the plant based yoghurt and milk of your choice. Top your cakes with the Gnawble flavour of your choosing and enjoy this sweet tasty snack!

Our Gnawble Cupcakes recipe is gluten and free from the top 14 allergens. There’s nothing better than a cupcake paired with a cup of tea or coffee in the afternoon.

  • 125g Plant Based Yoghurt (of your choice)
  • 100g Sugar
  • 80g Oil
  • 35g Plant Milk
  • Dash of Vanilla Extract
  • 145g Plain Flour (we like to use our gluten-free all purpose flour)
  • 30g Cornflour
  • 7g Baking Powder
  • 1/2 tsp Baking Soda
  • Drop of Lemon Juice
  • Pinch of Salt (why not try our pink himalayan crystal salt)
  • 1 tbsp Water
  • 50g Dark Chocolate Chips

1.Combine all the ingredients (apart from the dark chocolate chips) in a bowl and mix

2.Stir in the Chocolate Chips

3.Divide between 8 large muffin cases or 10/12 cupcake cases

4.Bake for 15/20 mins on 175 degrees Celsius (until a knife comes out clean)

5.Top with dairy free butter icing & of course, some GNAWBLES!
