Goji Berry Quinoa Salad

We couldn’t do a 15 minute meal without making a salad could we! ⁠ ⁠

Before making this recipe we didn’t think that this was going to be as easy and quick as it was, it look 15 minutes exactly! ⁠ ⁠

This salad is packed full of goodness and our Goji Berries add a delicious sweetness to it. It is the perfect lunch time salad or even something you can have alongside a burger!

The balance of savoury and sweet in this recipe is unmatched and compliments each other so well.

We promise that when you make this once, you won’t be able to stop, this is going to be your new go to salad.

Ingredients

  • x1 sweet potato (cubed)
  • 200g Kale
  • 30g of Goji Berries 
  • 185g Quinoa 
  • 1 lemon (juiced)
  • 20ml Olive Oil 
  • Salt to taste 
  • Pepper to taste

Method

  1. Bring two saucepans of water to the boil. In the first saucepan add your cubed sweet potato (the smaller the sweet potato the faster it will cook). Allow to boil for 5-10 minutes. 
  2. In the second saucepan add your quinoa, this will only take around 10 minutes to cook. Make sure to keep an eye on it. 
  3. With 5 minutes to go until both the sweet potato and the quinoa are cooked. Bring a pan to the boil with a drizzle of olive oil and add the kale until slightly wilted.
  4. Drain both the sweet potato and quinoa and add to a big mixing bowl followed by the kale and goji berries. 
  5. For the dressing mix some olive oil and the juice of the lemon together seasoning with a little bit of salt and pepper. Mix well.
  6. Pour the dressing over the salad and mix together until everything is covered with the dressing. 
  7. ENJOY!!
