Picnic Hamper

Tomorrow is the beginning of International Picnic Week so we wanted to give you some inspiration and show you our dream picnic using our free from baking mixes. We used our gluten free carrot cake and banana bread for our picnic hamper.

Picnics can be hard for people with allergies, especially finding foods that cater for everyone. We have got you covered with our allergy friendly baking mixes to create the perfect Picnic Hamper.

These are a perfect picky sweet picnic, packed with cakes, fruit and our Gnawbles for a chocolate fix too. The best thing about a picnic is you can choose your favourite foods so we have lots of different baking mixes that would be perfect for this occasion.

Now the weather is warming up, we are so excited for the picnic season which means lots of baking and spending time with friends and family. ⁠

Ingredients

  • 1x Creative Nature Carrot cake mix
  • 1x Creative Nature Banana bread mix
  • 3 Large ripe bananas
  • 40g Dairy free spread
  • 165g grated carrot
  • 70 ml Vegetable Oil
  • 65ml Cold Water
  • 156g Icing sugar
  • 60g extra virgin coconut oil
  • 30ml your favourite milk
  • Splash of vanilla extract
  • 1x Creative Nature HazelNOT Gnawbles 30g

Method

1. Preheat the oven to 180 degrees (fan)
2. For the carrot cake, in a large mixing bowl add the contents of the making mix, grated carrot, vegetable oil, cold water and apple cider vinegar (remember to leave some grated carrot to top off your cake at the end)
3. Pour the mixture into a greaseproof circular tin, then place in the oven for 30-35 minutes.
4. For the Banana Bread, in a bowl mash up the bananas until smooth with a fork.
5. Then add the baking mix and dairy free spread and store until fully combined.
6. Spoon the mixture into a greased loaf tin.
7. Place in the oven to bake for 25 minutes.
8. Once baked, take the banana bread out of the oven and cover the tin with foil and place in the oven for a further round 20 minutes.
9. Take the banana bread out of the oven and it should be golden brown on top.
10. To make the frosting for the carrot cakes, ensure coconut oil is room temp (nice and soft), then whisk it to a creamy texture in a bowl
11. Add the sugar while mixing together slowly, pop in the Vanilla, then slowly add the milk whilst mixing until you reach your desired consistency.
12. Using a cookie cutter, cut the carrot cake into circles and spread over the frosting and a sprinkle of grated carrot.
13. Place your bakes and Gnawbles into a picnic basket and enjoy!!
