

Sweet Potato and Black Bean Chilli
This chilli is packed full of goodness and there is nothing better than coming in from the cold to a warm hearty meal.
The thing that is so great about this chilli is that you can replace the sweet potato with any thing you’d like whether it be a meat alternative or meatless meat, its entirely up to you!

Ingredients
- 500g Sweet Potato
- 400g Black Beans, drained
- 400g Kidney Beans, drained
- 800g Chopped Tomato Sauce
- 150ml Veggie Stock
- 1tbsp Cacao Powder
- 2tbsp Worcestershire Sauce
- 1tsp Smoked Paprika
- 1tsp Ground Cumin
- Salt to taste
- Pepper to taste

Method
- Start by peeling and cutting the sweet potatoes. Cut the potatoes into cubes and dice the red onion
- Heat some olive oil up in a pan and add the diced red onion, cook until translucent. Add the smoked paprika and ground cumin and mix well
- Add both cans of chopped tomato and cook until it begins to simmer
- Add the sweet potato to the pan and place the pan lid on top and allow to simmer for around 10 minutes until the sweet potato begins to soften
- Add the kidney beans and black beans to the pan and mix well
- Add the Worcestershire sauce and cacao powder
- Allow to cook for another 10 minutes!
- Plate up and sprinkle some chopped up parsley on top and ENJOY!!
