Tomato Mozzarella Pesto Puff Pastries

Back in spring we created a delicious top 14 allergen pesto recipe and used it on pasta, but the uses don’t just stop there! Using it on a puff pastry is super easy, delicious, and your lunch will be freshly baked and ready in less than 20 minutes! ⁠

  • Puff pastry sheet, ready to roll, about A4 size⁠
  • 4 heaped tsp nut free pesto
  • (Vegan) mozzarella balls⁠
  • About 7-10 Fresh cherry tomatoes⁠
  • Creative Nature Hemp Seed

1. Preheat your oven to 180 degrees⁠ ⁠

2. Roll out your sheet of puff pastry and cut into 4 using a knife

⁠ ⁠ 3. Gently score a square within each piece of puff pastry using the same knife, then spread your pesto up to the edge of each of these lines.⁠ ⁠

4. Cut your tomatoes in half and microwave for 45 seconds to soften

⁠ ⁠ 5. Place your tomatoes and mozzarella evenly over the top of each pastry square and sprinkle some hemp seed on top, then bake in the oven for no more than 10 minutes⁠
