Vegan Pot Pies

Treat your Mother this year on Mother’s Day by cooking a lovely dinner that she will love. We made cute vegetable pot pies with heart shaped pastry to ensure she has a smile on her face.

⁠They were so easy and quick to make, so perfect for any nervous cooks.

There is no better way to show your appreciation and love than making a homecooked meal. You can also follow this with a lovely cake too, we have lots of options for you too.

There’s no need to go our for dinner when you can make these lovely pot pies.

Ingredients

  • 1x White onion 
  • 1x garlic clove
  • 190ml Vegetable broth 
  • 145g Frozen mixed vegetables
  • 24ml Plant based milk
  • 13g Creative Nature Gluten Free Flour
  • 1 sheet of puff pastry

Method

  1. Preheat the oven to 200 degrees. Dice the onion and garlic and add to a saucepan of olive oil.
  2. Add the flour and whisk, then add in the broth. 
  3. Add the milk and let it simmer for around 5 minutes.
  4. While the sauce is thickening, cut the puff pastry into two circles to cover your pot and use a heart cookie cutter to cut out two hearts.
  5. Add the frozen vegetables to the sauce for a further 5 minutes then add the sauce into the two pots. Add the pastry on top and brush over some milk.
  6. Place them in the oven for 15 minutes and ENJOY!
