What is your favourite flavoured cake?
In the UK, during 2020, the cake appearing in most searches online was ‘chocolate cake’. In some research to find UK’s favourite flavoured cake, chocolate cake came second to lemon drizzle. In the US, chocolate cake is the most popular, which makes it unsurprising why they celebrate Chocolate Cake Day on 27th January. Chocolate Cake Day celebrates the cake that we often bake for special occasions, like birthdays, or anniversaries.
America’s love affair with Chocolate Cake
Up until the 1830s and 40s, chocolate was something that Americans only consumed as a drink. Chocolate cake simply didn’t exist. The first recipe was apparently created by a popular Philadelphia cookbook author, Eliza Leslie, who published her recipe in 1847. Unlike today’s cakes, it used chopped chocolate. The first boxed cake mix was created by the company, O. Duff and Sons in the late 1920s. Then Betty Crocker, released their first dry cake mixes in 1947.
Following the tradition for baking mixes
Earlier baking mixes were often criticised for being dry, and of course, the baking mixes were not safe for those of us with food allergies. Five ideas for baking ‘safe’ chocolate cakes
*The celebration chocolate cake
Using the Cacao Rich Chocolate Baking Mix, add your favourite non-dairy milk (we like rice milk), and vegetable oil, you stir all of the ingredients together. Add to a greaseproof cake tin of your choice, either two 4 inch cake tins, or one 8 inch tin, and cook for about 25 minutes.

*Chocolate chip muffins
There is a vegan option for this recipe as well as non-vegan.
For the vegan option, add diary free spread and either 2 large bananas, or 3 flax eggs to the baking mix. Mix until smooth, and when at the correct consistency, spoon into muffin cases. *Chocolate Loaf with Courgette
For a different texture, add one grated courgette into the baking mix. It creates a lovely springy, fluffiness that you want from a chocolate cake! If you like to experiment, try adding other fruit or vegetables, such as beetroot.
*Chia Cacao Choc Chip Brownies
For yummy chocolate brownies, add 3 large eggs and 125 grams of dairy free spread to the brownie mix. Mix all of the ingredients together, and spoon into a baking tine, then bake for 20 – 25 minutes, depending on the level of squidgeyness you like. *Superfood Chocolate Mug Cake

2 tbsp buckwheat flour (14g)
1 tbsp coconut flour (7g)
1 1/2 tbsp Creative Nature raw cacao powder (10g)
1/2 tsp baking powder
2 tbsp Creative Nature Hemp Protein powder (12g)
1 tbsp Nut or Seed Butter (16g)
1/3c plant-based milk (80ml)
1 square dark chocolate, or 1 tbsp chocolate chips (12g)
1/2 tbsp Creative Nature Cacao Nibs (5g)
a pinch of Creative Nature Pink Himalayan Crystal Salt
- Add the flours, cacao, baking powder, and protein powder to a microwave safe mug and whisk to combine.
- Add the dairy free butter and milk, and mix until there are no clumps. Make sure to mix in the dry ingredients at the bottom of the mug at this step–you don’t want a clump of flour at the bottom of your cake!
- Fold in the cacao nibs and chocolate chips if using. Otherwise, top with your chocolate square.
- Sprinkle the cake with the salt, and microwave on medium (500W) for 2 minutes, or until done.
- Allow to cool for at least 2 mins and enjoy!
