When we decided to use our superfoods to create tasty, healthy baking mixes, we wanted it to cater for everyone, and we needed something nut free as I’m allergic to nuts! So after doing a lot of research and spending every evening after work in the kitchen, we came up with the perfect recipe that caters for all allergens, is organic and also has a high enough percentage of superfoods to offer tested health claims.

Brown Rice Flour*, Unrefined Cane Sugar* Dried Mulberries* (18%), Pea Protein*, Chia Seeds* (4%), Baking Powder (Mono Calcium Phosphate*, Corn Starch*, Raising Agent: Sodium Bicarbonates*)

JUST ADD

  • 400g Muffin Mix
  • 4 large eggs (or 5tbsp Chia Seeds + 15tbsp water for vegan recipe)
  • 200g butter (or dairy free spread for vegan recipe)
  • 5ml vanilla essence

HOW TO MAKE

  • (vegan recipe only) In a food processor or pestle & mortar, grind the Chia Seeds until fine. Mix in a bowl with the water and leave to sit for 5 mins, or until gloopy.
  • Preheat oven to 150 c/300 f/ Gas Mark 2
  • Add all of the ingredients to a mixing bowl and beat together until smooth (start of slowly so the flour doesn’t go everywhere!).
  • Spoon the mix into muffin or cupcake cases (we use silicon moulded for best results)
  • Bake for 25 mins or until golden brown, then remove and enjoy warm.

WHY NOT TRY

  • Adding a little indulgence with 50g of dark chocolate chips
  • Getting a little fruity by spreading jam over your muffins
  • Going nuts and throw 50g of chopped almonds in the mix

    Love these so easy to make I added some fresh blueberries and some broken up 70 per cent dark chocolate as happen to have both in the fridge. Also put a few pumpkin seeds on the top. I used Pure dairy free spread in mine. Very moorish my boyfriend loved them too.

    I made the vegan recipe, adding a drop of banana flavouring for a bit of oomph. They turn out great! They are healthy and taste ‘good for you’ so they really are a good treat for family and friends. I stretched the mixture to fill 12 muffin cups but would make 9 larger ones next time.
