Sweet Potato and Black Bean Chilli

 

This chilli is packed full of goodness and there is nothing better than coming in from the cold to a warm hearty meal.

The thing that is so great about this chilli is that you can replace the sweet potato with any thing you’d like whether it be a meat alternative or meatless meat, its entirely up to you!⁠

Ingredients

  • 500g Sweet Potato
  • 400g Black Beans, drained
  • 400g Kidney Beans, drained
  • 800g Chopped Tomato Sauce
  • 150ml Veggie Stock
  • 1tbsp Cacao Powder
  • 2tbsp Worcestershire Sauce
  • 1tsp Smoked Paprika
  • 1tsp Ground Cumin
  • Salt to taste
  • Pepper to taste

Method

  1. Start by peeling and cutting the sweet potatoes. Cut the potatoes into cubes and dice the red onion
  2. Heat some olive oil up in a pan and add the diced red onion, cook until translucent. Add the smoked paprika and ground cumin and mix well 
  3. Add both cans of chopped tomato and cook until it begins to simmer 
  4. Add the sweet potato to the pan and place the pan lid on top and allow to simmer for around 10 minutes until the sweet potato begins to soften 
  5. Add the kidney beans and black beans to the pan and mix well 
  6. Add the Worcestershire sauce and cacao powder 
  7. Allow to cook for another 10 minutes! 
  8. Plate up and sprinkle some chopped up parsley on top and ENJOY!!
