Shrove Tuesday in Lockdown

This year, we are about to celebrate Pancake Day during half term, and half term in lockdown, which means we have to make our own pancakes this year. No possibility to escape to a restaurant! Have fun making pancakes together as a family.

Why do we eat pancakes on Shrove Tuesday? Shrove Tuesday has over time, many of us have lost our religious focus, become more readily known as Pancake Day.For those of a Christian faith, Lent begins on Ash Wednesday, which is the start of the 40 days leading to Easter. During this time Anglo-Saxon Christians went to confession and were ‘shriven’ (absolved of their sins). Shrove Tuesday was a traditional feast day before the start of Lent, when people used up eggs and fats, before embarking on their fast. Pancakes are the perfect way to use these ingredients.

Shrove Tuesday always falls 47 days before Easter Sunday, therefore the dates varies each year. This year it falls on February 16th.
Traditionally, pancakes are thin, flat cakes, made of batter and fried in a frying pan. English pancakes are very thin, and served immediately after cooking. In past-times, the usual topping was lemon juice and caster sugar or syrup. However, in modern times, people top their pancakes with a variety of toppings. Almost anything goes, from savoury to extremely sweet toppings. Did you know pancakes have appeared in recipe books since 1439! The tradition of tossing or flipping them is almost as old:

“And every man and maide doe take their turne, And tosse their Pancakes up for feare they burne.” (Pasquil’s Palin, 1619).

How do you participate in Pancake day when you’ve got allergies or intolerances? Our CEO Julianne loves pancakes etc but like many others found free-from options were frankly – undelicious! The options of vegan, gluten-free, or allergen- free pancake mixes didn’t seem to live up to everyone’s favourite traditional pancakes. You can choose whether to have waffles or pancakes for your breakfast, and they are lusciously light and fluffy, American -style pancakes. We thought we would share some of our favourite pancake recipes, using our baking mix

Three Pancakes recipes:

1. Recipe: Basic Pancakes

Ingredients:
• 2 large eggs
• 130ml milk
• Creative Nature Pancake and Waffle Baking mix

Vegan Recipe:
• Creative Nature Pancake and Waffle Baking mix
• 200ml Your favourite plant-based milk
• 2 tbsp Apple cider vinegar

Method:
1. Pop your frying pan over a medium heat and add a splash of oil (or preheat your waffle maker if making waffles!)

2. In a mixing bowl, combine the wet ingredients, whilst thinking about all the yummy toppings you’re going to use.

3. Add in this pancake mix and vanilla if desired. Stir until the batter is mixed, but still slightly lumpy to keep the air and make your pancakes/waffles fluffy!

4. Using a ladle, measuring scoop or spoon, pour some batter onto the pan or add to your waffle maker.

5. Cook for about a minute, until bubbles start popping on the surface, then carefully flip using a spatula. Waffles will take 3-5 minutes in the waffle maker!

6. Cook the other side for about 30 seconds, until golden brown, then pop on your plate and do the next one!

2. Recipe: Raw Cacao Pancakes.

Ingredients:
• Follow the recipe for Vegan pancakes, above, but add to the mix,
• 2 tbsp Raw Cacao Powder
• 1 Tsp Coconut oil.

Method:
1. Prepare your pancake mix following point 1, using coconut oil, follow point 2.

2. When mixed, gently add your raw cacao powder, mixing gently until combined.
3. Recipe: Pancakes with Berries

Ingredients:
• Creative Nature Pancake and Waffle Mix
• 200ml Your Favourite Milk
• 1 tbsp Rose water (optional)
• 2tbsp Apple Cider Vinegar

Toppings:
• Fresh Berries
• Golden Syrup
• Creative Nature Cacao Nibs

Method:
1. Pop your frying pan over a medium heat and add a splash of oil.

2. In a mixing bowl, combine the wet ingredients, whilst thinking about all the yummy toppings you’re going to use.

3. Add in this pancake mix and stir until the batter is mixed, but still slightly lumpy to keep the air and make your pancakes fluffy!
